CAVA is a Spanish sparkling wine with designation of origin, white or rose, produced following the traditional method in the Spanish region CAVA (the same as in the region Champagne in France). The Spanish law specifies, that the name CAVA can be used only for wines produced in eight regions: Aragon, Basque Country, Castile and Leon, Catalonia, Extremadura, Navarra, La Rioch and Valencia. The production of sparkling wine in Spain is first documented at 1851. The wine, which is known as CAVA was originally produced from the same vine grape varieties as Champagne and for the first time was introduced at the World exhibition in Paris at 1868. In 1887 after the grapevines were attacked by Phylloxera, we the varieties changed and thanks to this has CAVA acquired the original features, which enabled its development. The main varieties used are Macabeu, Parellada and Xarel-lo but also the grapes of Pinot, Subirat or Chardonnay or others allowed can be used.
